Michael’s education in the culinary arts began at his family’s restaurant, where his parents passed down generations of authentic Italian recipes. Throughout the years, he has refined his culinary technique and learned valuable customer service, business, marketing, and management skills. Michael’s gastronomical journey led him to Sicily, where he earned a Culinary Arts Vocational Certificate at Scuola Antonello. He is also a Certified Food Manager (CFM) and holds a ServSafe Food Production Manager Certificate. Throughout the years, he’s participated in many training programs, mentorship opportunities, and hands-on projects to foster his passion for continuous learning.  His journey in healthcare food services began 11 years ago at a senior center where he had the privilege of cooking for their assisted living program. As a seasoned chef and customer service professional (with a passion for helping others), he revelled in the opportunity to improve the quality of life for residents, one at a time. His favorite part of this job is the ability to provide dignity to a vulnerable population, serving them gourmet, restaurant-quality food with a personal touch.  He also enjoys working with talented team members to constantly support and improve a dining experience that makes people smile. In his spare time, he enjoys volunteering for several faith-based organizations, such as the Salvation Army. He supports people in need, offering transportation, fellowship, counseling, speaking opportunities, and cooking and serving meals. He also likes to spend time at home with his wife and cat, watching funny movies. In addition to English, he has a professional working proficiency in Italian and Spanish. Fun fact: He was a New Jersey State Chess Champion in 2005.
